ingredients

Topping
  • 1 Tbsp all-purpose white flour
  • 5 Tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tsp canola oil
Dry Ingredients:
  • 3 cups all-purpose white flour
  • 3/4 tsp salt
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 1/4 tsp allspice
  • 1/4 tsp ginger
Wet Ingredients:
  • 16 oz. can pumpkin
  • 3/4 cup canola oil
  • 2 1/4 cups granulated sugar
  • 8 organic egg whites
  • 2 apples, peeled and chopped (ca 2 cups)

    Preheat oven to 350F. Combina all topping ingredients in a small bowl. Set aside.

    Sift all dry ingredients into a large bowl. Whisk with a wire whisk or fork until thoroughly blended.

    In a large bowl, beat wet inredients well with an electric mixer. Fold apple pieces into wet mixture.

    With a wooden spoon, add dry ingredients to the wet, stirring the batter by hand until well-blended. Pour batter into two non-stick loaf pans sprayed with cooking oil. Sprinkle on topping. Bake for about 50 minutes or until a toothpick inserted into the center of the loaf comes out clean. Cool on racks.
