ingredients

  • Japanese Eggplant, sliced 1/2-inch on the diagonal
  • Zucchini, cut 1/2-inch thick on the diagonal
  • Olive oil
  • 1 clove garlic, chopped
  • Salt & pepper or Greek seasoning
  • 1 tbsp. balsamic vinegar
  • French baguette or Ciabatta rolls
  • 1/2 cup pesto or artichoke spread
  • Sliced tomatoes
  • Provolone or Fontina cheese, sliced
  • Lettuce

    Preheat oven to 350°.

    Toss the eggplant and zucchini with olive oil and garlic. Add salt, pepper or Greek seasoning if desired. Lay veggies on a baking sheet and bake for about 10-15 minutes or until soft in the center. Remove from the oven and brush the warm veggies with vinegar.

    Cut baguette in half horizontally and hollow out the center. Brush interior of both sides with pesto or artichoke spread. Lay veggies on bottom. Place cheese on top. Cover with foil and put in 375°oven until hot, about 15 minutes.

    Add tomato and lettuce and enjoy.
