Glorious Sponge Cake
ingredients
- 6 eggs
- 1 cup sugar
- 1/4 tsp cold water
- 1 tsp vanilla or lemon
- 1 tsp lemon rind
- 1 cup sifted flour
- 1/2 tsp cream of tartar
- 1/4 tsp salt
directions
Beat egg yolks until thick and lemon colored. Beat in sugar gradually. Beat in water, flavoring and lemon rind. Beat in flour. Beat egg whites until frothy. Add cream of tartar and salt and beat until egg whites will hold a point. Gently fold into egg yolk mixture. Bake in deep 9-inch tube center pan ungreased 60 to 65 min at 325° slow to moderate oven.
