Chicken Chili
ingredients
- 2 cloves of garlic chopped fine
- 2 tablespoons extra-virgin olive oil
- 2 large onions, chopped
- 1 red bell pepper, cleaned & sliced
- 1 yellow pepper, cleaned & sliced
- 4 boneless, skinless breasts of chicken sliced & cubed
- 1 large can of red kidney beans
- 1 large can peeled whole tomatoes, crushed
- 1 tablespoon of chili powder
- 2 teaspoons of ground cumin
- salt & pepper to taste
directions
saute garlic in olive oil, but don’t brown. Add onions and sauté until limp (no laughing). Add red and yellow peppers and cook unil soft. Add chicken and cook for 10 minutes, or untilmeat is white, not pink. Add beans, tomatoes and spices. Stir. Simmer uncovered at low - medium heat for up to 3 hours, one hour minimum. Serve over rice or brab a bowl, add cheese and sour cream.
