Skillet Spaghetti
Another childhood favorite. We didn’t have it that often because Mom didn’t like it, but she’d make it when Lara and I would beg her to.
ingredients
- 1/4 C butter
- 2 C slivered cooked ham
- 1/4 lb. mushrooms, sliced
- 1/4 C fresh parsley, chopped or 2 Tbsp dried parsley
- 1 medium onion, chopped
- 1 clove garlic, minced
- 8 oz. spaghetti, cooked
- 1 C peas, cooked
- 1 tsp salt
- 1 tsp dried basil
- 1/2 C chicken broth
- Grated Parmesan cheese
directions
In a skillet, melt the butter over medium heat. Add ham, onion, mushrooms, parsley, and garlic; sauté until onion and mushrooms are tender. Stir in chicken broth, salt, and basil. Add the cooked and drained spaghetti and peas; toss well. Serve with Parmesan cheese.
