Mediterranean Orzo Salad
serves 4-6
ingredients
- 1 1/2 cups orzo
- 1 cup cherry tomatoes, halved
- 3/4 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh mint, chopped
- red wine vinegrette:
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 2 T lemon juice
- 1 t dijon mustard
- 1/2 t honey
- 1/2 t salt
- 1/2 t pepper
directions
In a bowl, combine all ingredients for the vinegrette except oil. When brought together, slowly stream in the olive oil. Cook orzo according to directions. In a large bowl, combine all ingredients with the vinegrette.
