Sweet Potato Casserole with Marshmallow
I made this recipe this past Thanksgiving 2008 and left the marshmallows off of half of the top since we have diabetes going on in the family. That way, everybody got a serving and nobody felt cheated. When you are a woman of excess you don’t like to feel deprived! I got this out of a Southern Living cookbook.
ingredients
- Sweet Potato Casserole
- 8 medium size sweet potatoes (6 lb)
- 1 cup milk
- 1/4 cup butter
- 3 Tbsp sugar or splenda
- 1 tsp vanilla extract
- 1 Tbsp orange juice
- 1 tsp orange zest
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 (10.5 oz) miniature marshmallows
directions
Bake sweet potatoes for 1- 1 1/2 hours at 400 degrees. Scoop out the pulp and place in a mixing bowl. Heat milk and next 3 ingredients in a saucepan over medium heat until the butter melts (DO NOT BOIL). Stir in everything else except the marshmallows. Beat the potatoes at medium speed with electric mixer until they are mashed. Add milk mixture and continue beating slowly. Spoon half of the potato mixture in a lightly greased 13 x 9” baking dish. Top with half of the marshmallows. Spread remaining mashed potatoes over this then bake uncovered at 350 degrees for 25 minutes. Top with remaining marshmallows and bake 8 to 10 minutes more. Yield: 8-10 servings
