Fluffy Sponge Cake

Ingredients:- 6 eggs, separated
- 1/2 c. sugar
- 1/3 c. water
- 1 1/2 c. flour
- 1 tsp. baking powder
- 2 tsp. flavoring*
- 1/2 tsp. salt
- 1 pinch cream of tartar
directions
Method of Preparation:

Whip the egg yolks together with the sugar until the mixture turns a pale yellow color. Slowly add the water and continue to whip for 5 minutes.

Sift the flour, baking powder, and salt together. Slowly add it to the yolk mixture.

In a clean bowl, whip the egg whites with a pinch of cream of tartar until they reach soft peaks.

Fold in the flavoring* and the egg whites into the above mixture.

Pour into a greased and floured cake pan and bake at 325 degrees F until finished. You can check to see if it’s finished by pressing in the center of the cake. If it springs back then it’s finished. It should bake for at least 20 minutes.

*You can use a variety of different flavors. Vanilla, lemon,orange, and almond will all work well.
