White Fruit Cake
ingredients
- 1 lb. Confectioners sugar
- 2 sticks butter or margarine
- 4 c sifted flour
- 1 tsp baking powder
- 1 tsp salt- 1 t nutmeg 1 t cinnamon
- 1 tsp each of lemon and vanilla
- 6 eggs
- 1/2 lb chopped pecans
- 1/2 lb walnuts or almonds
- 1/2 lb glazed cherries
- 1/2 lb glazed pineapple
- 1 – 1 1/2 c coconut
- 1/2 lb mixed candy fruits
- 1/2 lb whit raisins
- 10 oz red or whine wine or sherry

Beat butter, sugar, and eggs well. Add flour and floured fruits. Last fold in coconut.

Bake in tube pan 375° to 300° 3 hrs.

Cool and wrap in foil.
