Mom's Macaroni Casserole
ingredients
- 1 pound ground beef
- Medium onion, chopped
- 1/2 bell pepper, chopped
- 2 cloves garlic, chopped
- Salt and pepper
- Olive oil
- 2 cans tomato soup
- 2 cups elbow macaroni
- 1 egg, lightly beaten
- 1/4 cup milk
- 1 cup grated cheddar cheese

Preheat oven to 350 degrees.

Cook macaroni in boiling salted water until just before al dente.

Brown the ground beef in a couple tablespoons of olive oil in a large skillet. Add the onion, pepper, garlic, and seasonings and sautee until vegetables are tender. Add 2 cans of tomato soup (no water) and cook for 15 minutes or until the liquid has reduced.

Drain the macaroni and add it to the tomato beef mixture. Beat the egg and milk in a small bowl and add it to the beef.

Lightly grease a 13 x 9" casserole and add the beef and macaroni to the dish. Top with cheese and bake for 20-25 minutes or until mixture is bubbly and cheese is melted.
