Beef with Broccoli and Onion
ingredients
- 1 lb. Flank Steak
- Marinade-
- 1 tablespoon sherry
- 4 tablespoons soy sauce
- 1/4 teaspoon pepper
- 1 teaspoon sugar
- 2 teaspoon cornstarch
- 1 tablespoon oil
- 1/2 lb. broccoli
- 1 large onion
- 4 cloves garlic
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- 6 tablespoons oil
- 1 teaspoon oyster sauce
- 1/2 cup water or beef broth
- 1 teaspoon sesame oil

Rinse steak and pat dry. Cut lengthwise into 3 strips. Slice each strip crossgrain about 1/8 inch thick.

Combine marinade ingredients and marinate meat for 20 minutes or up to 24 hours.

Rinse broccoli and pat dry. Break off small branches about 2 inches below florets. Peel tough skins from stems, and slice diagonally into 1/8 inch pieces.

Cut onions lengthwise into 8 parts and separate pieces.Crush Garlic. Dissolve cornstarch in water.

Heat wok or skillet first, then add 4 tablespoon oil. Add garlic until it flavors the oil, then remove. Over high heat, stir in half the meat. Remove it when no sign of pink remains. Stir fry second half of meat and remove. Add 2 tablespoons oil to wok, stir fry broccoli and onions. Add oyster sauce and cook for two minutes. Then add beef, mix well. Add water or broth. When liquid boil, push food to sides. In the center, thicken liquid with cornstarch, mixture, then mix with food. Add sesame oil and serve immediately.
