Chocolate Peant Butter Cake

- Cake Ingredients-
- 2 cups sugar
- 1 3/4 cups cake flour
- 3/4 cups unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup strong coffee, room temperature
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla
- Peanut Butter Frosting-
- 2 1/2 cups well-chilled whipping cream
- 6 1/2 tablespoons sugar
- 6 1/2 tablespoons peanut butter

To prepare cake: Preheat oven to 350*F. Butter and flour two 8-inch round cake pans. Sift sugar, flour, cocoa, baking soda, baking powder, and salt in large bowl. Using electric mixer, gradually beat in coffee, buttermilk, oil, eggs, and vanilla until well blended. Pour batter into prepared pans.Bake until toothpick inserted in centers comes out clean, about 35 minutes. Cool in pans on rack for 10 minutes. Remove cakes from pans. Cool completely. Wrap in plastic and let stand at room temperature overnight.

Using serated knife, split each cake into 2 layers. Set one layer cut side up on plate. Spread with 1/2 cup frosting. Set second layer cut side up atop first. Spread with 1/2 cup frosting. Top with fourth layer cut side down. Spread top and sides of cake with remaining frosting. Refrigerate and serve cake chilled.

Using electric mixer, beat all ingredients until stiff peak forms. Use immediately.
