Big Apple Pancakes
ingredients
- 1/2 stick unsalted butter
- 2 large apples cut into wedges
- 1/2 cup whole milk
- 1/2 cup all-purpose flour
- 4 large eggs
- 3 tablespoons sugar
- 1/2 teaspoon vanilla
- 1/2 teaspoon salt
- confectioners sugar for dusting

Melt butter in an ovenproof skillet, then transfer 2 tablespoons of butter into the blender.

Add apple wedges to skillet and cook, turning over once, until beginning to soften, about 3-5 minutes .

While the apple is cooking, add milk, flour, eggs, granulated sugar, vanilla, and salt to the butter in your blender and blend until smooth.

Pour the batter over apple and transfer the skillet to the oven. Bake until the pancake is puffed and golden, about 15 minutes.

Dust with confectioners sugar and serve immediately.
