Bucatini All'Amatriciana
ingredients
- 1 medium onion, finely chopped
- 4 oz. diced *Pancetta
- 3 tablespoons olive oil
- 1 large can Italian crushed tomatoes (28 oz)
- salt to taste
- 1/2 - 1 teaspoon red pepper
- 1 package of Bucatini or Spaghetti
- Parmesan Cheese

Sauté onion and pancetta (till crisp) in olive oil until pancetta is crisp and onion is transparent. Add tomatoes, salt, red pepper and cook on medium heat for about 10- 15 minutes until the sauce thickens. Serve with Parmesan cheese.

* Can use bacon for “American” version. Fry strips of bacon in olive oil, then remove and place on paper towel. Crumble and place back in pan with tomato ingredients.

Serves 4 unless you invite David Foard. Then it only serves 3 so you’ll have to cook more pasta.
