Vegetable Stew with Peanut Sauce
ingredients
- 2 tsp. oil
- 1 chopped onion
- 4 cloves garlic
- 1 pickled, chopped jalopeno pepper
- 2 green bell peppers, chopped
- 1 red pepper, chopped
- 2 zucchini, halved and cubed
- 3/4 lb. potatoes
- 3/4 lb. sweet potatoes
- 1 1/2 cups vegetable broth
- 3/4 tsp. ginger
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper
- 8 oz. can tomato sauce, unsalted
- 1 tbsp. creamy peanut butter
directions
Cook onion, garlic, and jalapeno pepper in oil until the onion is soft. Then, add peppers and zucchini and cook for 5 minutes. Add potatoes, vegetable broth, ginger, salt, and cayenne pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 10 minutes. Finally, add tomato sauce and peanut butter, boil and then reduce to a simmer before serving.
