Breads - Cindi's Healthy Pumpkin Bread
This bread is addictive - we polish it off quickly - it’s also a multi grain treat!
ingredients
- 1 cup whole wheat flour
- 2 cups all purpose flour
- 1/3 cup soy flour
- 1/3 cup wheat germ
- 1/3 cup ground oats (oat flour)
- 1/3 cup ground flax seed
- 1 teaspoon allspice or 1/2 tsp cloves
- 2 cups white sugar
- 1 cup brown sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons cinnamon
- 1/3 - 1/2 cup canned carrots or baby food carrots, pureed
- 1 can pumpkin
- 4 large eggs
- 2/3 cup oil
- 1/3 cup pureed prunes or applesauce
- 1/4 cup water, if needed
- pecans or walnuts if desired

Mix dry ingredients in mixer; add wet. Blend well. Pour in 2 loaf pans.Top with nuts. Bake at 350° for 1 hour or until pick comes out clean.

Optional Crumb topping (this makes a less healthy, but super yummy cake):

Mix 3/4 cup flour, 1/2 tsp cinnamon, 1/3 cup brown sugar and cut in 1/3 cup hard butter. Mix lightly with hands until coarse meal forms. sprinkle on top of cakes.
