Egg Biscuits "Italian Wedding Cookies"
Nanny made these for family weddings and the family picnic every year.
ingredients
Cookies:- 7 eggs, beaten until frothy
- 1 stick margarine/butter, melted
- 4 c. flour
- 6 tsp. baking powder
- 1/2 tsp lemon flavoring
- 1/2 tsp. orange flavoring
- 3/4 c. sugar
- 1/4 c. oil
- 1/2 tsp. salt
- 1/2 tsp. vanilla
- 1/2 tsp. almond flavoring
- Frosting:
- 1/2 c. milk
- 1 lb. confectioners sugar
- 1/2 tsp. lemon flavoring
- 1/2 tsp. orange flavoring
- 1/4 tsp. melted butter
- 1/2 tsp. vanilla flavoring
- 1/2 tsp. almond flavoring
- colored sprinkle, for decoration
- 1/2 c. milk
- 1 lb. confectioners sugar
- 1/2 tsp. lemon flavoring
- 1/2 tsp. orange flavoring
- 1/4 tsp. melted butter
- 1/2 tsp. vanilla flavoring
- 1/2 tsp. almond flavoring
- colored sprinkle, for decoration
directions
Method of Preparation:

Cream the margarine/butter with the sugar. Add the eggs, oil, and flavorings.

Sift the flour, baking powder, and salt together.

Add the dry ingredients to the wet ingredients. Let the dough stand for 20 minutes.

Flour a pastry board, roll out each cookie to approximately 4 inches long.

Make a circle with the dough and twist it.

Bake at 400 degrees F, for 10 minutes.

Mix together the ingredients for the frosting.

While still warm, dip the top of each cookie in the frosting and sprinkle the colored sprinkles on top of each cookie. Let dry and cool.

*Change the color of the sprinkles depending on the occasion.
