Braised Fukien Bean Curd
Velvety soft braised tofu for any occasion...
ingredients
- 1 - 2 blocks firm bean curd
- 1 cup stock
- 2 tablespoons oyster sauce
- 2 table spoons soy sauce
- 1 teaspoon sugar
- 1 tablespoon dry sherry, or sake, or Shao-sing wine
- 2 scallions, cut into sections

In a sauce pan, cover bean curd with cold water and boil over high heat for 10 minutes. Remove from boiling water and drain.

Place bean curd in a sauce pan and add stock, oyster sauce, soy sauce, sugar, wine, and scallions. Simmer over a medium flame for 20 minutes.

Remove bean curd from sauce and slice into rectangles about 1/2 inch thick. Serve with or without sauce.
