Lentil Soup
ingredients
- 5 cups vegetable stock or water
- 1 cup dried lentils
- 1 cup peeled, seeded, diced tomatoes (about 8 oz)
- 1 cup diced onion (1 large)
- 3/4 cup peeled and diced potatoes (about 6 oz)
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 2 tsp. finely chopped garlic
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1/4 cup chopped fresh cilantro
- 1 T fresh lemon juice
- 1 tsp. grated fresh lemon zest
- 1 tsp salt
- 1/3 tsp black pepper

Combine vegetable stock, lentils, tomatoes, onion, potatoes, carrots, celery and garlic in large stock ot. Bring to boiling over high heat. Lower heat; cover and simmer 30 minutes. Add cumin and coriander, simmer for about 15 minutes longer

2. Stir in cilantro, lemon juice, lemon zest, salt and pepper. Serve hot
