Irish Potato Casserole
ingredients
- 6-8 medium potatoes cooked with skins on, then peeled and grated with a box grater
- 2 cups sharp cheddar cheese
- 1 stick butter, melted
- 1 can cream of chick soup
- 1 8 oz. sour cream
- 1/3 cup chopped onion
- salt and pepper to taste.
- TOPPING:
- 1 stick melted butter
- 1/2 small box corn flakes crushed

Mix all ingredients together and put in a greased 13x9 baking dish.

Combine melted butter and crushed corn flakes. Put on top.

Bake at 350-400° for 30-45 minutes until bubbly.
