French Vanilla Bean Ice Cream
This is an extremely rich custard ice cream in the best French tradition and flavored with real vanilla beans. A cooked recipe but well worth the trouble.
ingredients
- 1 pint half and half
- 1 vanilla bean
- 3 eggs, slightly beaten
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/8 tsp salt
- 1 pint whipping cream
- 1 can sweetened condense milk

Put half and half in medium saucepan and let it begin to heat over medium heat. Take vanilla bean, slice lengthwise and chop into small pieces; add it to saucepan. Add eggs, sugar, brown sugar and salt. Mix thoroughly and stir frequently. Allow to cook for 15 minutes, but do not allow to boil.

In large mixing bowl, add whipping cream and condensed milk. After saucepan mixture has cooked, strain heated mix into mixing bowl and stir thoroughly with whipping cream mixture. Allow to cool, then age in referigerator for about 4 hours. Freeze in ice cream freezer according to manufacturer’s directions.
