Cheddar and Dill Scones
ingredients
Scones- 4 cups + 1 Tbsp. flour
- 2 Tbsp. baking powder
- 2 tsp. salt
- 1 1/2 cups butter
- 4 eggs (lightly beaten)
- 1 cup heavy cream (cold)
- 1 cup cheddar (diced)
- 1 cup fresh dill
- 1 egg (beaten)
- 1 Tbsp. milk

Preheat oven to 400°.

Mix together 4 cups of flour - salt.

Add butter, and mix on low until have pea-sized clumps.

In a separate bowl, mix together eggs and cream. Quickly add to the flour mix, and stir until just blended.

Toss the cheese, dill, and remaining 1 Tbsp. of flour together. Add to the scone mixture, and fold in until almost incorporated.

Knead dough for 1 minute, roll out to 3/4 inch thick. Cut dough into 4 squares, then diagonally.

Make egg wash, and brush over the tops of the scones.

Bake 20-25 minutes.
