Uses artichokes, mushrooms and olives

ingredients

  • 1.5 pounds ground beef
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 2 cloves garlic
  • 28 oz. chopped tomatoes
  • 3 8oz cans tomato sauce
  • 1 T. basil
  • 2 T. oregano
  • 1 tsp salt
  • 1/4 tsp crushed red pepper
  • 4 bay leaves
  • 1/2 lb. mushrooms
  • 2 T. butter
  • 1 egg
  • 2 T. butter
  • 2 cups ricotta or cottage cheese
  • 9 No Boil Lasagna noodles
  • 14 oz. artichoke hearts - not marinated
  • 6 oz. black olives sliced
  • 1 cup shredded Swiss cheese
  • 2 cups mozzarella
  • 1/2 cup parmesan

    Brown beef and onions - drain. Add all ingredients down thru Bay leaf and simmer 1 hour. Sauté mushrooms in butter. Combine egg and ricotta cheese.

    Cover, bake 350° for 45 minutes. Uncover, add parmesan, bake 10-15 more minutes. Let rest for 15 minutes.
