Another Lasagne
Uses artichokes, mushrooms and olives
ingredients
- 1.5 pounds ground beef
- 1 cup chopped onion
- 1 cup chopped green pepper
- 2 cloves garlic
- 28 oz. chopped tomatoes
- 3 8oz cans tomato sauce
- 1 T. basil
- 2 T. oregano
- 1 tsp salt
- 1/4 tsp crushed red pepper
- 4 bay leaves
- 1/2 lb. mushrooms
- 2 T. butter
- 1 egg
- 2 T. butter
- 2 cups ricotta or cottage cheese
- 9 No Boil Lasagna noodles
- 14 oz. artichoke hearts - not marinated
- 6 oz. black olives sliced
- 1 cup shredded Swiss cheese
- 2 cups mozzarella
- 1/2 cup parmesan

Brown beef and onions - drain. Add all ingredients down thru Bay leaf and simmer 1 hour. Sauté mushrooms in butter. Combine egg and ricotta cheese.

Cover, bake 350° for 45 minutes. Uncover, add parmesan, bake 10-15 more minutes. Let rest for 15 minutes.
