Fred Salvino's Famous Garlic Bead Chicken Parmesan
ingredients
Chicken Ingredients- 2 eggs
- 1 tablespoon milk
- 3/4 cup Italian Style Bread Crumbs
- 1/4 cup plus 1 tablespoon grated Parmesan cheese
- 1 1/2 cups vegetable oil for frying
- 1 lb. boneless skinless chicken breast, cut into bite sized pieces
- 1 cup whole milk or part skim ricotta cheese
- 1 1/2 cups shredded mozzarella
- 1 1/2 teaspoons dried parsley
- 1/4 teaspoon ground black pepper
- 1/2 cup butter, softened
- 1 teaspoon garlic powder
- 1 1/2 cans (11 oz. can) Pillsbury Refrigerated Bread Sticks (18 breadsticks)
- 1 1/2 cups tomato sauce (jar sauce is fine)

Chicken Preparation

In a small bowl lightly beat eggs with milk. In another small bowl combine bread crumbs and 1 tablespoon Parmesan cheese.

In a large skillet, heat vegetable oil over moderately high heat until hot but not smoking.

Place 1/2 of the chicken pieces in the egg mixture and turn to coat. Transfer coated chicken to the bread crumb mixture and dredge until evenly coated.

Carefully place coated chicken in skillet and fry, turning over once, until golden brown. about 6 minutes.

Transfer with tongs to paper towels to drain. Repeat process with remaining chicken pieces.
Filling Preparation
In a medium bowl, mix together ricotta cheese, 1/4 cup Parmesan cheese, 1/2 cup mozzarella, parsley and pepper until combined.
Breadstick Topping Preparation
In a small bowl, mix butter and garlic powder together until combined.
Assembly:

Spray 8 x 8 pan with non stick cooking spray.

Unroll breadstick dough and separate into 18 breadsticks.

Layer pan in the following order:

Line bottom of pan with 8 breadsticks.

Spread 1/2 of butter mixture over breadstick layer, coating breadsticks evenly.

Spread ricotta filling over buttered breadstick layer.

Spread 3/4 cup pasta sauce over ricotta mixture.

Place chicken pieces evenly over sauce layer.

Spread remaining 3/4 cup pasta sauce over chicken layer.

Spread remaining 1 cup shredded mozzarella cheese over pasta sauce.

Layer remaining 10 breadsticks over top of cheese.

Spread remaining butter over top of breadsticks.

Place pan on top of cookie sheet, tent with aluminum foil, and bake for 15 minutes.

Remove foil and bake for 15-20 minutes longer until breadsticks are golden brown.
