Chicken Cordon Bleu Burgers
ingredients
- 2 t olive or vegetable oil
- 2 slices Canadian bacon
- 1 lb ground chicken
- 1 t sweet paprika
- 1 t poultry seasoning
- salt and pepper to taste
- 1/4 c onion, finely chopped
- 2 slices swiss cheese
- 1/3 c mayonnaise
- 2 T Dijon mustard
- 2 kaiser rolls (or English muffins)
- lettuce & tomato

In a small bowl, combine mayonnaise and mustard. Set aside.

In a large non-stick skillet, cook Canadian bacon until it’s brown around the edges on both sides. Set aside.

In a mixing bowl, combine chicken, paprika, poultry seasoning, salt, pepper and onion. Mix well. Form into 2 patties.

Add 2 t oil to non-stick skillet. Brown chicken patties until cooked through, about 5 minutes on each side. Top each burger with swiss cheese. Turn off pan. Cover with lid or aluminum foil until cheese melts.

Toast rolls if desired. Spread mustard sauce on each roll. Assemble burger. Top with lettuce and tomato if desired.
