8-Bean Vegetarian Chili
Southwestern hearty vegetarian chili.
ingredients
- 1 medium onion
- 1 clove garlic
- 1 can each:
- black beans
- red kidney beans
- navy beans
- great northern beans
- hot seasoned chili beans
- white beans
- lima beans
- giant white beans
- whole kernel corn
- stewed diced tomatoes
- salt and pepper to taste
- 1 t smoked paprika
- 1 t cumin
- 1 t crushed red pepper
- 1 t cayenne pepper
- 1 t celery salt
- 1 t white pepper
- olive oil
directions
Chop onions and garlic and sautee in olive oil until they begin to brown. Let them brown and stick, then deglaze with the tomatoes and juice. Simmer over medium high and add spices - adjust amounts to taste. Stir and simmer over medium high for 5 minutes. Add beans and corn, water as necessary, cover and simmer on low for 30 minutes. Stir occasionally to prevent sticking.

Serve with pita chips. Top with tomatoes, sour cream or cheddar cheese, and fresh avocado slices.
