Easy Ravioli with Zucchini
This is one of my favorite quick meals. I can’t really call it cooking but it feels like “real food”.
ingredients
- 1 small-medium zucchini cut into coins or half moons
- 1 small onion, sliced thin
- 1/2 small red pepper, sliced thin
- minced garlic
- 1/2 bag frozen ravioli (I like spinach)
- 1/2 jar of your favorite sauce
- shredded mozzarella
- half and half
- basil
directions

Saute the zucchini, onions, peppers until soft. Add minced garlic (to taste) and saute a few minutes longer. Add sauce and simmer.

Boil ravioli until done (they will all float when done). Drain and add to sauce.

Add a handful of cheese and a splash or two of half and half. Stir until cheese is melted.

Serve with fresh basil.

You can use whatever veggies (or meat) you have on hand. I often make it with just zucchini.
