Summer Solstice Bread
A tasty bread for your Solstice celebrations.
ingredients
- 3 tablespoons olive oil
- 1/4 cup chopped onion
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1/2 cup shredded Romano or Parmesan cheese
- 1/4 cup fresh basil chopped
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup butter milk
- 1 tablespoon water
- 2 or 3 Roma tomatoes, very thinly sliced

1. In a skillet heat 1 tablespoon of the olive oil over medium heat.

2. cook and stir onion in hot oil for 5 minutes or until golden brown; set aside.

3. Preheat oven to 375 degrees.

4. In a large mixing bowl combine all purpose flour, wheat flour, cheese, basil, baking powder, baking soda, and salt.

5. Make a well in the center of dry ingredients.

6. Slightly beat one egg

7. In a small bowl stir together remaining oil, buttermilk, and the beaten egg.

8. Stir in onion mixture.

9. Add buttermilk mixture to flour mixture, stirring until flour mixture is just moistened.

10. With floured hands, knead gently in bow 2 or 3 times or until dough is nearly smooth.

11. Shape into two 4 in rounds; or into one 6 in round loaf.

12. Place on lightly greased baking sheet.

13. Slightly beat the remaining egg with 1 tablespoon water and brush loaf with egg mixture.

14. Arrange tomato slices on top.

15. Bake for 25 to 30 minutes or until golden brown.

16. Cool on wire rack.

17. Can be eaten warm or at room temperature.
