Tart Greens with Apples, Pecans, and Buttermilk Honey Dressing
Elegant yet easy salad.
ingredients
- 1/4 cup cider vinegar
- 1/4 cup sour cream
- 1/4 cup buttermilk
- 3 Tbsp. honey
- 1 tsp. minced garlic
- 1 scallion, minced
- Pinch of ground red pepper
- Salt and ground black pepper to taste
- 1/2 cup olive oil
- 6 cups tart greens (arugula, radicchio, endives, etc.)
- 2 granny smith or other tart apples, cored and very thinly sliced
- 1/2 cup pecan halves, toasted

Whisk together vinegar, sour cream, buttermilk, honey, garlic, scallion, red pepper, salt and black pepper.

Add olive oil in slow, steady stream, whisking constantly.

Toast pecans. Combine greens in salad bowl. Stir dressing well, add just enough to greens to moisten and toss to coat. Divide greens among salad plates and top with apples and pecan halves. Serve immediately.
notes
Buttermilk substitute = add 1 Tbsp. lemon juice or 1 tsp. vinegar to a cup of milk. Let stand 5 minutes then beat well.
