Mexican Orange Candy

ingredients

  • 1 cup sugar
  • 1/4 cup boiling water
  • 2 cup sugar
  • pinch salt
  • 1 cup evaporated milk
  • 1 tsp grated orange rind
  • 1 cup chopped nuts

directions

Caramelize 1 c. sugar to rich amber color; add boiling water and boil, stiring occasionally until caramel is entirely dissolved. Turn into 3 qt saucepan, add next 3 ingredients and cook to soft ball (236°) Just before candy is done, add oragne rind. Remove from heat, place in pan of cold water, and cool without any further stirring or shaking of pan. When cool enough so hand may be held on bottom of pan comfortably, beat until candy begins to siften. Then stir in nuts and drop from teaspoon on buttered waxed paper.
