Chicken & Asparagus Penne
ingredients
- 1 1/2 cups Penne Pasta (cook until al dente)
- 1 cup chopped asparagus (steam til tender crisp)
- 6 oz boneless skinless chicken breast (cut in 1 inch cubes)
- 2 cloves garlic minced
- 1 can 14.5 oz diced tomatoes w/ herbs
- 1 ounce soft goat cheese (crumbled)
- 1 tbsp parmesan cheese
directions
Spray large non-stick fry pan with Pam and add chicken and garlic. Saute over med-high heat. Cook till chicken is golden brown. Add tomatoes (with juice) and simmer 1 minute. In brown add cooked pasta, asparagus, chicken and goat cheese. Toss to mix. Sprinkle with Parmesan.
