Christmas Soup or Tortellini Soup
This soup makes plenty for 6 to 8 friends easily. This is an easy winter soup recipe is from Barb Christiansen of Cedarburg. The red and green color scheme is perfect for the holidays.
ingredients
- 2 T. olive oil
- 2 oz. pancetta or bacon, finely diced
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 (49 1/2 oz.)can chicken broth
- 2 t. dried Italian seasoning
- 9 oz. cheese tortellini
- 1 (28 oz) can crushed tomatoes in puree
- 8 oz. fresh spinach, rinsed, stemmed, and chopped
- 1 C. freshly grated Parmesan cheese
- Salt and pepper to taste
directions
Heat the olive oil in a stockpot over medium heat. Add pancetta (bacon),garlic and onion. Cook, stirring frequently until brown, 10-15 minutes. Add chicken broth and Italian seasoning. Bring to a boil and stir in tortellini. Season with salt and pepper. Top with fresh Parmesan cheese.
