Stuffed Mushrooms
ingredients
- 24 large mushrooms
- 2 t. grated parmesan
- 8 oz. cream cheese
- 4 oz. crabmeat (refreshed with lemon)
- 2 1/2 t. olive oil
- 2 T. breadcrumbs
- Juice 1/2 lemon
- 1 1/2 t. minced shallot
- 1 1/2 t. Cognac
- 1 t. Dijon mustard
- 1 t. salt
- 1/2 t. pepper

Heat oven to 425 degrees F, butter baking sheet

Combine 2 T. Parmesan and next 10 ingredients in medium bowl and beat with electric mixer 5 minutes. Fill mushrooms; bake 10 minutes.

Sprinkle with 2 T. parmesan

Run under broiler
