Stuffed Mushrooms

ingredients

  • 24 large mushrooms
  • 2 t. grated parmesan
  • 8 oz. cream cheese
  • 4 oz. crabmeat (refreshed with lemon)
  • 2 1/2 t. olive oil
  • 2 T. breadcrumbs
  • Juice 1/2 lemon
  • 1 1/2 t. minced shallot
  • 1 1/2 t. Cognac
  • 1 t. Dijon mustard
  • 1 t. salt
  • 1/2 t. pepper

    Heat oven to 425 degrees F, butter baking sheet

  • 2

    Combine 2 T. Parmesan and next 10 ingredients in medium bowl and beat with electric mixer 5 minutes. Fill mushrooms; bake 10 minutes.

    Sprinkle with 2 T. parmesan

  • 4

    Run under broiler
