Cooking Tips for Shrimp and Fish
Your dad’s tips for cooking perfect fish.

- Purchase fresh fish - it will make all the difference.

Wash fish in cold water and pat dry with paper towels.

Shrimp ~ Bring water to a boil. Add shrimp and cover. Boil for two minutes, watch the clock not the shrimp. After two minutes remove from the heat and drain. Place in an ice bath after draining to stop cooking.

Tuna steak ~ Rub with olive oil on each side, salt and pepper. Heat broiler to 500. Cook 2 1/2 minutes on each side.

Salmon fillet ~ Keep the skin on the fillet. Place the salmon on a foil-lined pan skin side down (clean up will be very easy). Rub with olive oil, salt and pepper. Bake on 400 for 15 - 20 minutes depending on the thickness of the steak.
