Blueberry Buckle

I remember mom taking this to work for birthdays and special breakfast get togethers for the holidays. It smelled wonderful when it came out of the oven! We have also experimented with replacing the blueberries with cherries, and this has also been quite good.

ingredients

  • 3/4 c sugar
  • 1/4 c soft margarine
  • 1 egg
  • 1/2 c milk
  • 2 c flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 c well-drained blueberries
  • Crumble top:
  • 1/2 c sugar
  • 1/2 tsp cinnamon
  • 1/3 c flour
  • 1/4 c margarine (softened)

    Preheat oven to 350. Cream the sugar into the margarine. Add the egg and milk and combine. In a separate bowl, mix together the flour, baking powder, and salt. Slowly add the dry ingredients into the wet ingredients. Pour batter into a greased 8 x 8 pan.

    Combine the sugar, cinnamon, and flour for the crumble top. Cut in the margarine. Sprinkle over the top of the batter. Bake at 350 degrees for 45-50 minutes.
