"Cowboy Cookies"
...bursting with a delectable combination of chocolate chips, pecans, and coconut....
ingredients
- 3 c. flour
- 1 tbsp baking powder
- 1 tbsp baking soda
- 1 tbsp ground cinnamon
- 1 tsp salt
- 1 1/2 c. butter (3 sticks) @ room temp.
- 1 1/2 c. granulated sugar
- 1 1/2 c. light brown sugar (packed)
- 3 eggs
- 1 tbsp vanilla
- 3 c. semi-sweet chocolate chips
- 3 c. old-fashioned rolled oats
- 2 c. sweetened flake coconut
- 2 c. chopped pecans

Preheat oven to 350°.

Mix flour, baking pweder, baking soda, cinnamon and salt in a bowl.

In a LARGE bowl, beat butter on medium speed for 1 minute, until smooth and creamy.

Gradually beat in sugars to combine for 2 minutes.

Add eggs, one at a time, beating after each.

Beat in vanilla.

Stir in flour mixture until just combined.

Add chocolate chips, oats, coconut and pecans.

For each cookie, drop 1/4 c. dough onto an ungreased baking sheet, spacing 3 inches apart. (or if you want small cookies, use 2 tbsp dough for each)

For the large cookies, bake for 17-29 minutes (rotating half way through). For the smaller ones, bake 15-18 minutes.

Remove cookies to a rach to cool.

This recipe makes a LOT of cookies, it can easily be halved to make the same amount of "normal" sized cookies, or you can make the whole batch and freeze half the dough for later.
