Betsy's Christmas Eve Salad

This is very yummy and Betsy serves it on Christmas Eve!

ingredients

  • Salad greens
  • Dried cranberries (1 bag for 2-3 bags of lettuce)
  • Crumbled blue cheese
  • Candied pecans (see below)
  • Best balsamic vinaigrette – p.42 in EveryDay Feasts:
  • 1/4 cup (packed) golden brown sugar
  • 1T. olive oil
  • 1 T. balsamic vinegar
  • 1 cup pecan halves

directions

Lightly coat sheet of foil with nonstick spray. Stir sugar, oil and vinegar in heavy medium skillet over medium heat until sugar melts and syrup bubbles, about 3 minutes. Mix in pecans. Stir until nuts are toasted and syrup coats nuts evenly, about 7 minutes. Turn nuts out onto prepared foil. Using fork, separate nuts and cool completely (coating will harden).
