ingredients

  • pkg boneless chicken breast
  • 2 tsp curry
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp chili powder
  • 5 gloves garlic
  • 2 jalapenos
  • broccoli
  • mushrooms
  • 1 tsp olive oil
  • 14 oz can coconut milk (unsweetened)
  • 1 tbsp cornstarch
  • 1 red onion
  • 1 tsp basil

    Season chicken breasts with curry, salt, pepper and chili powder and set aside

  • 2

    In a pan saute desired amount of mushrooms and broccoli with onion, garlic, jalapeno and olive oil for 2 Min’s on medium high

  • 3

    Remove from pan

  • 4

    Add chicken to pan and cook till brown

  • 5

    Add coconut milk and cornstarch to hot pan and cook til thick and bubbly. Make sure to stir!

    Add back in chicken and onion and vegetables

  • 7

    Stir in basil

  • 8

    Serve over rice
