Lemon Chicken Bake
ingredients
- 1 egg, lightly beaten
- 1 TBS milk
- 1/4 tsp salt
- Dash of pepper
- 1 clove garlic, crushed, minced
- 4 Boneless, skinless chicken breast halves
- Seasoned dry bread crumbs
- 4 TBS olive oil
- 1/3 cup chicken broth
- 2 TBS dry white wine or chicken broth
- 2 TBS fresh lemon juice
- 1/4 cup grated Parmesan cheese

1. In shallow dish, stir together beaten egg, milk, salt, pepper, and minced garlic.

2. Between sheets of plastic or waxed paper, pound chicken breasts to flatten. Dip flattened chicken breasts in egg mixture and roll in bread crumbs to coat well.

3. In large, heavy skillet, heat olive oil over medium heat. Cook chicken in skillet, turning once, until golden brown. Transfer to paper towels to drain.

4. Arrange chicken breasts in a shallow baking dish.

5. In small bowl, combine chicken broth with white wine and lemon juice. Pour broth mixture over chicken. Sprinkle Parmesan cheese over the top.

6. Cover and bake at 350° for 20 minutes. Uncover and bake 10-15 more minutes.
