Orange Pinapple Fruit Cake

Excellent for the holidays. Bake ahead of time. DELICIOUS flavor gets better with age.

ingredients

  • 1 cup butter
  • 2 cups white sugar
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 8 ounces orange-flavored fruit slice jelly candies, chopped and floured
  • 8 ounces candied pineapple, chopped and floured
  • 1 cup chopped dates
  • 2 cups chopped walnuts
  • 1 cup flaked coconut
  • 1 cup pineapple-flavored rum
  • 2 cups confectioners’ sugar

    -Preheat oven to 300 degrees.

    -Cream butter

    -Add sugar and whip until light an fluffy

    -Add to sugar mixture one egg at a time and mix.

    -Sift flour, salt, and soda together.

  • 6

    -Alternate mixing flour mixture and buttermilk into sugar mixture.

    -Fold in orange slices, dates, nuts, and coconut.

    -Pour batter into a greased and floured tube pan.

  • 9

    -Bake at 300 degrees F for 1 3/4 to 2 hours.

    -Adjust time according to pan size.

    -Remove cake from oven.

  • 12

    -Mix together rum and confectioner’s sugar.

  • 13

    -Pour over hot cake while still in pan.

  • 14

    -Twice a week for two weeks spritz the cake(s) with rum to age.

  • 15

    -Cover them with a dish towel as they age.
