Parboil Duck: Small for 10-15 minutes; large for 15-20 minutes.

Cut up celery, onion (into 1/8ths), apples, etc.

Stuff cut up celery, onions, apples and spices in to cavity of the duck.

Pour off water and goop.

While hot, groom on dry wine (dark) burgandy.

Wrap in foil and bake in slow oven at 300 for 45 to an hour for small duck and 1 hour to 1 1/2 hour for large duck. Baste once in awhile with wine.
