Vegetarian Lasagna

- 1 green pepper
- 1 red pepper
- 1 large purple onion
- 1 head of broccoli
- 1 carton of mushrooms
- 1 small green zucchini
- 1 small yellow squash
- 1 eggplant
- 2 cloves garlic minced
- 1 can spaghetti sauce
- 1 can tomato paste
- 1 tablespoon sugar
- Lasagna noodles
- Ricotta cheese
- Mozzarella cheese
- 1 egg
- Salt and pepper

Cut all vegetables to desired size, cook over medium heat until vegetables are cooked. While vegetables are cooking, cook lasagna noodles until cooked and combine spaghetti sauce, tomato paste, garlic, and sugar in a medium sauce pan - cook till warm. Next combine ricotta cheese, handful of mozzarella cheese, egg and salt and pepper.

Once everything is mixed and cook - in an 13x9 pan layer sauce, noodles, cheese, vegetables, sauce, noodles, cheese vegetables - until pan is full. Sprinkle remaining mozzarella cheese over top and cover with tin foil. Cook in a 350° oven for 30 minutes. Remove foil and cook for an additional 5 minutes or until cheese is brown.
