Mom's Original Eggplant Parmasiana
I believe as the years progressed, Mom advanced this recipe to a microwavable version. But, this original recipe remains in the recipe box and here is reproduced.

- eggs
- cracker crumbs
- olive oil
- butter
- 16 oz can tomato sauce
- garlic salt
- oregano
- pepper
- basil
- mozarella cheese
- parmesan cheese

This recipe card completely lacked measurements for the ingredients, so I think we should all make it the way Mom made it...by just figuring it out!

Preheat oven to 350. Slice eggplant into 1/2 in circles. Dip in egg and cracker crumbs, brown lightly in oil over low heat. Place in buttered baking dish. With one can of tomato sauce, mix garlic salt, oregano, pepper and basil to taste. Top eggplant with mozarella cheese. Cover with tomato sauce. Add parmesan cheese. Bake at 350 for 30 minutes.
