Beef Enchiladas
ingredients
- 1 1/2 pounds ground beef
- Oil
- Salt
- 1 medium yellow onions, diced
- 1 4-ounce can sliced black olives
- 1 pound sharp cheddar cheese, grated
- 12 corn tortillas
- Sauce
- 4 tablespoons vegetable oil
- 1/2 cup flour
- 1 pint water
- 1 10-ounce can enchilada sauce
- 1 8-ounce can tomato sauce
- 2 tablespoons chili powder
- 1 tablespoon cumin powder
- Salt
- Garnish
- Sour cream
- Chopped green chilies
- Salsa
- Guacamole
- Sliced black olives

Cook beef in oil, salt to taste. Set aside in a large bowl and let cool. Add onions, olives and half of the cheese. To prepare sauce, combine ingredients. Cook until thick. Cool. Heat tortillas in oven for 1 -2 minutes then run through sauce. Put 1/2 cup meat mixture in the middle of each tortilla. Roll and place seam side down in a 9 x 13-inch ovenproof dish. Spread remaining sauce on top then sprinkle with remaining cheese.

Bake at 350* for 45 minutes. Top with any or all of the garnishes, if desired.
