Date and Fig jam

  • 1 c. dark brown sugar
  • 2 qt water
  • 1 cinnamon stick
  • 1/2 tsp whole allspice
  • 1/2 tsp whole cardamom pods
  • 1 dry red chile pepper
  • 1 pt orange juice
  • 1 c. cider vinegar
  • 1 tsp kosher salt
  • 1 1/2 qt dry dates pitted
  • 1 qt dry figs, finely diced, set aside in large bowl

    In a covered pot, simer all ingredients except for dates and figs for 30 minuutes. Strain the spices from the liquid.

    Add the dates to pot of liquid, simmer lightly until soft. In food procesor, puree until smooth.

    While its still hot, pour date puree over the diced figs and stir in. The dry figs wsill absor the extra liquid

    Let cool and store in jars

    try with cheese and honey, serve with roast pork
