Turkey Meatballs

These meatballs are nice to have in the freezer for quick meals. They freeze well and cook in about 5-10 minutes.

  • 3 tablespoons olive oil

  • ½ onion, finely diced

  • 1 pound ground turkey

  • ½ cup freshly grated Parmesan cheese

  • ¼ cup chopped fresh flat-leaf parsley

  • ¼ cup Italian bread crumbs

  • ¼ cup chopped sun-dried tomatoes

  • 2 eggs, lightly beaten

  • ¾ teaspoon salt

  • ¾ teaspoon freshly ground pepper

  • Store bought marinara sauce for serving

  • Heat the olive oil in a medium, heavy skillet over medium heat. Add the onion and cook until tender, about 4 minutes. Remove from heat and let cool.

  • In a large bowl combine onion with the remaining ingredients and stir to combine. Form the mixture into 2 inch diameter balls (you will use about 2 tablespoons for each).

  • Place onto a foil or parchment lined baking sheet. Freeze overnight and place into zip lock bags.

  • To serve, place desired number of meatballs in microwave safe baking dish and cover with marinara sauce. Microwave on 50% power for about 8 minutes, or until done.
