These meatballs are nice to have in the freezer for quick meals. They freeze well and cook in about 5-10 minutes.
3 tablespoons olive oil
½ onion, finely diced
1 pound ground turkey
½ cup freshly grated Parmesan cheese
¼ cup chopped fresh flat-leaf parsley
¼ cup Italian bread crumbs
¼ cup chopped sun-dried tomatoes
2 eggs, lightly beaten
¾ teaspoon salt
¾ teaspoon freshly ground pepper
Store bought marinara sauce for serving
Heat the olive oil in a medium, heavy skillet over medium heat. Add the onion and cook until tender, about 4 minutes. Remove from heat and let cool.
In a large bowl combine onion with the remaining ingredients and stir to combine. Form the mixture into 2 inch diameter balls (you will use about 2 tablespoons for each).
Place onto a foil or parchment lined baking sheet. Freeze overnight and place into zip lock bags.
To serve, place desired number of meatballs in microwave safe baking dish and cover with marinara sauce. Microwave on 50% power for about 8 minutes, or until done.
