Tortilla Soup
This Tortilla Soup deserves its own party.
ingredients
- 3 skinless, boneless chicken breasts
- 1/2 tsp olive oil
- 1/2 tsp minced garlic
- 1 tsp ground cumin
- 5 cups chicken broth
- 1+1/4 cups corn kernels
- 1+1/4 cups black beans
- 1 cup chopped onion
- 1 tsp chili powder
- 3 tbsp lemon juice
- 2 cups chunky salsa
- corn tortilla chips
- shredded cheese
- sour cream
- avacado
- fresh cilantro

In a large pot over medium heat, saute the chicken breasts in the oil for about 5 minutes. Sprinkle in the garlic and cumin and mix well. Then add broth, corn, black beans, onion, chili powder, lemon juice and salsa. Boil for 3 minutes, then reduce heat to low and simmer for at least 45 minutes or until chicken is shred-able. Tear chicken with two forks (I like to remove it from soup, shred and put back into pot).

Break up some tortilla chips into individual bowls and pour soup over chips. Top with some cheese, avocado, cilantro and sour cream.
