Pan Fried Tilapia with White Wine, Tomato & Capers
Aaron says this is a really good recipe - funny, it’s never been served to Adam and Arika! Is Sarah trying to keep it a secret? “Excuses, excuses! You should have told me!”
ingredients
- 1/4 C White Wine
- 1/4 C Tomatoes (seeded & chopped)
- 2 T Lemon Juice
- 2 T Capers (rinsed & drained)
- 1 Garlic Clove (or 2, minced)
- 1/2 t Dried Basil
- 4 6 oz Tilapia Fillets
- 1/2 t Salt
- 1/4 t Pepper
- 1/4 C Flour
- 1 T Olive Oil
- 2 T Butter
- 2 T Fresh Parsley (chopped)

In a small mixing bowl, combine first 6 ingredients. Stir well with a whisk & set aside.

Sprinkle tilapia with salt & pepper, dredge (lightly) in flour & coat both sides with cooking spray. Heat oil in a large pan over medium-high heat. Add tilapia, cook for 3 minutes. Reduce heat to medium, flip fillets, cook 3 minutes or until fish flakes easily. Remove from pan.

Add wine mixture to the pan, cook 30 seconds, stirring constantly. Remove from heat, stir in butter until melted. Plate fillets, spoon mixture over fish, sprinkle with parsley.

Toss a lemon wedge on the plate for added lemon juice and decoration!
