City Chicken
ingredients
- 2 lbs. boneless pork, cut into pieces (i use pork chop suey)
- 1/2 cup flour
- 1/2 tsp. garlic salt
- 1/4 tsp. pepper
- 1/4 cup butter
- 3 tbls. veg. oil
- 1 envelope onion soup mix
- 1 can chicken broth
- 1 cup water
- hot mashed potatoes
directions
thread pork on wooden skewers (or to keep it easy you can skip the skewers). combine flour, garlic salt, and pepper on a plate; roll meat in mixture until coated. in large skillet, heat butter and oil over med heat, browning meat and turning frequently. drain and put back in pan. sprinkle with soup mix. add broth and water. reduce heat, cover and simmer for an hour. remove meat from pan and thicken juices in pan with water and flour mixture and then serve over potatoes.
