Almond Roca Candy

ingredients

  • 1 pound butter (real butter)
  • 1/2 pound almonds
  • 2 cups sugar
  • 1 package chocolate chips - semi-sweet

    Chop nuts rather fine (in blender), sprinkle half of them over bottom of cookie sheet. Chop chocolate chips (in blender) and sprinkle half of the chocolate chips over nuts on cookie sheet.

    In medium sized pan, cook sugar and butter together to hard crack stage (290 degrees) stirring all the time. Pour quickly over nut and chocolate chips in pan. Sprinkle other half of chocolate chips over hot candy. Then sprinkle remaining nuts over chocolate. When cold, break in pieces.

Freeze chocolate chips first and only blend small amounts at a time. Use a candy thermometer.
